Lemon Herb Spaghetti

225g of Spaghetti
1/4 cup of Extra Virgin Olive Oil
1 Tbsp of Fresh Rosemary
 1 Tbsp of Fresh Oregano Leaves
1 Tbsp of Fresh Thyme
(if you have dried herbs, half the measurement so it's like 1/2 tbsp of dried herbs each)
1 Clove of Garlic (or as much as you like)
1/4 cup (or to taste) of Freshly Squeezed Lemon Juice
zest of 1/2 of a Lemon
Salt and Pepper, to taste

*should serve about 2-3 people
This is a beautifully simple dish adapted by Laura Vitale. She loves to make things simple and this so happens to be vegan :D

- Boil the spaghetti according to the packet's instructions and add generous amount of salt
- Chop the fresh herbs or pour the dried herbs into a large bowl

- Then add the rest of the ingredients (oil, lemon juice, lemon zest and chopped herb mixture with a touch of salt and pepper)

- Add the cooked and drained spaghetti, give everything a good toss. Allow the spaghetti some time to absorb all the flavours
add in all the ingredients in a big bowl
mix everything together
mix it with a spaghetti and let it sit for about 5-10 minutes

you can also add some vegetables to make it more wholesome but keep in mind that it will throw off the proportion of the ingredients, you would have to do trial and error with the amount of ingredients
