Madagascar Vanilla Mousse, Pain de Genes Chocolat & Sour Cherry Marmalade
I love the combination of the acidity of the cherries with the slight sweet vanilla mousse. One thing I love how this baker does it is that his cakes are not conventionally sweet. Everything on the cake is edible which includes the raspberries, the flowers and the leaves. I'm not sure what species are the flowers but the leaves were mint which goes well with chocolate. This layers to this cake should be eaten together as each layers complements each other. The raspberry at the bottom is sour and the vanilla mousse being sweet, eat them together and it is delightful!
